1T olive oil
1lb. Smoked sausage
11/2c diced onion
2 cloves garlic minced
2c chicken broth
1(10 oz) can Ro-Tel tomatoes, mild
1/2c heavy cream
8 oz Penne pasta (uncooked)
1/2t salt and pepper
1c shredded Monterey Jack cheese
Add Olive Oil to skillet over medium heat. Then add sausage and onion. When it is lightly browned, throw in garlic and cook for about 1 more minute. Next add tomatoes, broth, cream, pasta, salt and pepper. Cover and cook for about 15-20 minutes until pasta is tender. Stir in ½ cup of cheese and heat until melted. Then top with remaining cheese and serve.
This is delicious and it is really not very spicy. It makes a quick and easy comfort dish on these chilly winter nights. My husband loved it and even offered to clean up the kitchen! Maybe I should call it The Miracle Spicy Sausage Pasta!
