An easy supper that's ready in less than 30 minutes!
Last weekend Drew and I took the doors off of our master bathroom in hopes of remaking them into French doors.
When I say Drew and I, I really mean just Drew. Have I mentioned that I ‘married up’ with him? Or, in football terms, I 'out-kicked the coverage' by marrying him.
Anyways, Drew was taking the doors off and I was watching Food Network, snap-chatting, and cheering him on. My DVR is at about 73% due to the back-up of Pioneer Woman episodes sitting in there. I record all of her shows but never have time to watch them. Well, now was the time for a full-on marathon.
Drew was obviously thrilled.
During the time that I was watching, Drew would mutter a sarcastic comment every-now-and-then relating to what Ree was making. We were on episode four of our binge and she started making Skillet Chicken Lasagna. The sarcastic comments stopped and Drew was hooked. I immediately went to Pinterest and pinned the recipe and started thinking about when I could cook it for him.
I mean, the man gave up a whole Saturday to fix a door for me. Surely, I could make him a meal in return!
This dish has all of my favorite C words…carbs, chicken and cheese! Serve with a side salad and some crusty, garlic-y bread….YUM!
Ok, first things first - trim up your chicken and cut it up into bite size pieces. Throw it into a skillet and season. Once it's done, take it out of the skillet and set it aside. We'll add it back in later.
In the same skillet, add the onion and garlic. Stir it around for about 3 minutes then add in the broth. Let cook for an additional 2 or 3 minutes.
Add in the marinara sauce and red pepper flakes - simmer for 10 minutes. We'll add in the pasta next so make sure that's ready.
Turn off the heat and add the cooked and drained pasta, a spoonful of ricotta, a handful of Italian shredded cheese, parmesan and the cut up basil.
Toss it all up and you've got supper!
