Chicken Fajita Bake

You'll love this easy weeknight supper!

Drew and I absolutely loved this dish. It's an easy one that doesn't require much prep - thank goodness. I love to cook but when I've been working all day, the last thing I want to do is stand over the stove for an hour. Ya feel me?!

Step 1: Prep your chicken! I almost always tenderize my chicken before I bake, fry or grill it. Put it between two pieces of saran wrap and pound away. Trim up the fat and lay them in a 9x13 casserole dish.

Step 2: Sprinkle on some taco seasoning.

Step 3: Lay the thinly sliced onions and peppers over the chicken, drizzle with olive oil.

Step 4: Cheese, cheese and more cheese!

Step 5: Bake at 375 degrees for 35-45 minutes!

That's it! We served our chicken over a bed of quinoa but I think it would be good over rice too.

Chicken Fajita Bake

Ingredients:
  • 3-4 boneless skinless chicken breasts
  • 1-2 tablespoons taco seasoning
  • 2 bell peppers in assorted colors, deseeded and thinly sliced
  • 1 red onion, thinly sliced
  • 1-2 tablespoons olive oil
  • 1/2 cup shredded sharp cheddar or Mexican blend cheese

Instructions:
  1. Clean and trim the chicken breasts then lay them in a single layer in a baking dish. 
  2. Sprinkle the taco seasoning over the top of the chicken.
  3. Lay your sliced onions and peppers on top of the chicken, spread out evenly over the top.
  4. Drizzle the olive oil over the peppers and onions.
  5. Sprinkle cheese over the top of the dish.
  6. Bake at 375 degrees for 35-45 minutes or until chicken is cooked though and the juices run clear.

Notes:
 
  • I added a little dollop of sour cream to mine once it was plated, yum!
  • I halved this recipe since I was just making it for the two of us!
