A fun and tasty way to celebrate your favorite team!
Football season is finally here and I am over the moon! Last season, I wrote about what's it's really like to be the wife of a football coach. This season, I wanted to highlight a few of my favorite things about this time of year:
1. Back on schedule: I know where I am going to be on Friday nights at 7:30...at least for the next few months! During the summer, we have a hectic schedule. Beach for this week, morning work-outs, scrimmages, etc. During the season, it's all very scheduled and that just makes my heart happy.
2. The remote is where it belongs: In my hands! Drew, I love you but if I have to watch that National Championship game one more time - I may scream. I have 43 episodes of The Pioneer Woman saved on our DVR and they have my name written all over them.
3. My cute cowbell comes out of storage: Oh, what joy! I hope the people that sit around me are just as excited about this...
4. Friday nights with your people: Without getting all Remember the Titans on you, football unites our town. It's fun to sit in the stands with people all cheering for the same cause.
5. Snacks that celebrate your team: There's just something about eating a snack that has your team's colors. It tastes better, right?

Anyone else a breakfast-skipper like me? Sure, on Saturday mornings I love a home cooked breakfast or a Cajun filet biscuit (oh my goodness) from Bojangles’. But on weekday mornings I usually just settle for a cup of coffee.
When I was little, Mama would throw a granola bar at me from the front seat and make me eat it on the way to school. Of course, I whined about it the whole way there and eventually wore her down.
As an adult, I live with one of the healthiest people ever. He actually enjoys eating vegetables and dislikes junk food (most of the time). I hate to say it, but his healthy habits have rubbed off on me. We eat semi-healthy meals at home that include quinoa, whole wheat pastas, and lots of salads. Because of Drew, I actually enjoy turkey bacon now.
I have a feeling my Dad will hang his head in shame with that last sentence. As a former meat-man at Piggly Wiggly, the man loves his real bacon.
Every Christmas I get the urge to make sugar cookies. But then I remember – I don’t have an artistic bone in my body. We’ve all seen the detailed cookies on Pinterest – aren’t they cute?
Cute? Yes. Realistic? Oh no.
I love everything about Fall! Mums, chilly air, changing leaves, scarves and boots, hayrides, football (Go Gamecocks!), the fair, fall candles-and my favorite, PUMPKINS! I love pumpkins so much that I decided to grow pumpkins in my garden this year! I was already thinking about pumpkins in July, when I had to plant them, and my house was already decorated for the fall on Labor Day. Fall is just my favorite time of the year so I want to enjoy it for as long as I can! My favorites list goes a little like this:

My friend Sarah Kathryn is Anti-Pumpkin, but I still love her and her tiny flaw. So naturally she turned to me, her pumpkin obsessed friend, for a pumpkin recipe! So if you like (love) pumpkin like I do, then this recipe is for you!
When my children were little, they loved to all pile into the car and drive around looking at the Christmas lights. They would ooh and aah over the lights, sing to the Christmas music playing in the car, and drink…milkshakes – or eat ice cream.
What can I say? We live in the south. They have never really acquired a taste for hot cocoa because truthfully, it’s just too darn hot to drink in 70+ degree weather. But there was always something in me that wanted to bundle them up and put a cup of warm cocoa in their little mittened hands.
I ran across this recipe for Hot Cocoa milkshakes a few years back. I wish I would have had it when they were little. I think it would have made the Christmas light sightseeing experience so much richer. At least it would have for me. Snow would have helped, too!
• 6 half-ounce pieces of your favorite chocolate
• 2 teaspoons hot chocolate mix
• 1 1/2 tablespoons sugar
• 1 1/2 cups milk
• 3 cups ice
• Whipped cream
• Chocolate shavings, candy canes, mini chocolate chips…whatever makes you feel Christmassy!
Break or chop the chocolate into small pieces and place it in the top of a double boiler over simmering water, stirring occasionally until melted. If you don’t have a double boiler, use a heavy saucepan and stir over low heat. Add the cocoa and sugar, stirring constantly until thoroughly blended. Remove from heat and slowly add 1/2 cup of the milk and stir until smooth. Cool to room temperature.
In a blender place the remaining cup of milk, the room temperature chocolate mixture, and the ice. Blend on high speed until smooth. Top with whipped cream and any other toppings you choose.

After you have carved your Pumpkin, don’t throw away the seeds! They are full of fiber and make a great and tasty treat.
Here are two recipes for this healthy snack.
Spiced Pumpkin Seeds
1 ½ Tablespoon of margarine, melted
½ teaspoon of salt
1/8 teaspoon of garlic salt
2 teaspoons of Worcestershire Sauce
2 cups raw whole pumpkin seeds
Preheat oven to 275 degrees and combine all of the above ingredients, mix well and place in a shallow baking dish. Bake 1 hour, stirring occasionally.
Sweet Pumpkin Seeds
2 Tablespoons of Olive Oil
1 Tablespoon of sugar
1 Tablespoon of cinnamon
Wash all seeds in a colander and shake dry. They will stick together if you try to dry them with a paper towel.
Spread seeds in a single layer on an oiled baking sheet. Bake 30 minutes @300 degrees. Then toss with combined above ingredients and bake for 20 more minutes.
Well, get ready for all of your 4th of July picnics and gatherings! Here are two quick and easy party time treats for you to be the “Domestic Diva” of the day! They are EASY! One is for the kids, and the other is for the grown ups. Feel free to eat both!
The first recipe is for M&M Brownies:
Bake 1 box of brownie mix according to directions @ 350. Bake for about 12 minutes (or ½ of cooking time shown on brownie box). Then sprinkle all over the top with red, white and blue M&M’s and continue baking for about 11-13 more minutes. Insert a toothpick to see if they are done. Let cool before cutting.
Now, for the second patriotic dessert:
You will need an angel food cake (mine is store bought), blueberries, strawberries, cool whip and a clear bowl to show off your beautiful creation.
First, tear up the cake into bite sized chunks. Then layer cake, berries, and cool whip into your bowl. Depending on bowl size you may need 2-3 containers of each and repeat layers 2-3 times. Save a little cool whip and a few berries to garnish the top.
These treats will sparkle, shine and pop right along with your 4th of July fireworks! Also, before you enjoy your holiday spread, remember to pray for peace in our great nation and for wisdom and guidance for our country’s leaders.

Don’t let the title fool you I am not advocating “Grinchiness”, especially not at Christmas time!! But I did make a cool Grinch snack that was a hit at our class Christmas Party and it is healthy too. I think this treat was on Pinterest. Anyway, gather up the following…
1 bunch of green grapes (Grinch face)
2-3 bananas (sliced for hat brim)
2 baskets of strawberries (tops cut off for Santa hat)
1 bag miniature marshmallows (top of hat)
1box of toothpicks
Next, you will “kabob” your ingredients in this order… grape, banana slice, strawberry, (upside down so that the point of the berry is up), and marshmallow. I used two toothpicks; one wasn’t quite long enough. These are easy, cute and nutritious; try using all of those words to describe the usual Christmas concoction! My friend, Rachel, took these to her church’s Christmas treat day and even won a few awards!! You, however, may not win any awards, but they are fun to make and tasty to eat. So, enjoy your Christmas.

*** Warning… if these treats seem too healthy for Christmas, just dip in chocolate or powdered sugar and resume your “sugar high” for the holidays!!!
The 4th of July has always been a fun family holiday for me. My family and I have always enjoyed good food, fellowship, and fireworks. It’s a time to stop and enjoy a little rest and relaxation. It’s also a time to be so thankful for our country and its founding fathers; men with such fortitude and foresight!
This year remember to say a prayer for the USA as we celebrate our freedom with our loved ones. We are truly a Blessed Nation!
Here is an easy twist to an old favorite on the 4th…
Cut up watermelon into triangular wedges, leaving the rind on. Using a paring knife, cut a slit into the rind and insert a popsicle stick (this makes them fun and easy to hold). These can then be served in a tub of ice to keep cold ( Put watermelon side down into ice so sticks are showing and easy to grab). Enjoy this refreshing treat and there is no guilt in having more than one!

Warm weather is here!! With the arrival of spring and summer, outdoor parties are a must. It’s the time to enjoy birthdays, graduations, weddings, engagements, cook for your wife day; I’m sure that is on the calendar somewhere. Anyway, it is definitely time to celebrate! Here is a fun way to add a pop of color to all of your warm weather activities. Fill your ice cube trays with different colors of Kool Aid, then add to your clear drinks - sparkling water, Sprite, Sierra Mist, 7-Up. They will look so refreshing and the taste changes as your ice melts. These will be a must at your next pool or beach party, enjoy!!
