Saturday was an absolutely beautiful day. My family and I spent almost all day outside doing chores, reading and relaxing. Well, I must admit I was the one reading and relaxing and my family was doing chores (I call it father - daughter-bonding time). At the end of this beautiful day, my hubby fired up the grill (my favorite way to cook!), and we had our favorite most delicious meal ever! Thought I’d share it with you.
4 Salmon Steaks – Cover both sides of salmon steaks with Cavender’s Greek seasoning and marinate in ½ bottle of Italian dressing for about 30 minutes. Cook for about 6 minutes on each side on hot grill (about 375).
Asparagus Spears - (fresh or frozen) marinated in ¼ cup of olive oil, 2 teaspoons of Cavender’s, 3 tablespoons of brown sugar, 2 teaspoons of Basil and 2 teaspoons of Sea salt (mix everything together and let asparagus sit for about 15 minutes). Cook on grill with salmon for about 5 minutes turning often.
Creamy Grits- Make grits according to directions but instead of water use Half-and-Half (don’t forget to add salt). These tasted like whipped cream, delish!!
In keeping with our outside theme for the day, we decided to eat on the deck. So we covered our pollen covered table with a beach towel (no linen on the deck!), lit our citronella candle (did I mention it’s not screened in?), and had what my daughter declared was the best meal ever at the end of the best day ever!
“This is the day the Lord has made let us rejoice and be glad in it” Psalm118:24 As Christians that should be our mantra every day. Each day is really such a gift.
