Don’t let the title fool you I am not advocating “Grinchiness”, especially not at Christmas time!! But I did make a cool Grinch snack that was a hit at our class Christmas Party and it is healthy too. I think this treat was on Pinterest. Anyway, gather up the following…
1 bunch of green grapes (Grinch face)
2-3 bananas (sliced for hat brim)
2 baskets of strawberries (tops cut off for Santa hat)
1 bag miniature marshmallows (top of hat)
1box of toothpicks
Next, you will “kabob” your ingredients in this order… grape, banana slice, strawberry, (upside down so that the point of the berry is up), and marshmallow. I used two toothpicks; one wasn’t quite long enough. These are easy, cute and nutritious; try using all of those words to describe the usual Christmas concoction! My friend, Rachel, took these to her church’s Christmas treat day and even won a few awards!! You, however, may not win any awards, but they are fun to make and tasty to eat. So, enjoy your Christmas.

*** Warning… if these treats seem too healthy for Christmas, just dip in chocolate or powdered sugar and resume your “sugar high” for the holidays!!!
Yes, it’s finally here ready or not. That time of year for love, presents (getting and giving of course), music, food, lots of food, and families getting together; it’s Christmas! I love, love, love, Christmas! I had the privilege last week of getting into the Christmas Spirit at First Baptist Church’s Singing Christmas Tree. It was awesome as always. Jay Shealy and the enormous cast that it takes to put on this production once again told the story of Christ’s birth through music, drama, dancing, and lights. One thing that was emphasized during this year’s production is that the story of Christ’s birth is always the same. No matter the restrictions, politics of the day, differing venues, or an ever changing audience, Jesus, Joseph and Mary have been handed down through the ages as the One True Christmas story. A story of love, trials, redemption, grace, peace and miracles all come together in Jesus. So, this year share the love and the Christmas story with your friends and family. Here is a recipe from the program for the Singing Christmas Tree. Bake these delicious cookies and attach a copy of the Christmas story. It’s up to us to keep the tradition alive of passing on Jesus to others. “And the angel said to them; Fear not; for I bring you good tidings of great joy, which shall be to all people.”(Luke 2:10)
½ c soft butter ¼ t salt
2 t cream of tartar 2 eggs
½ c soft shortening 2T sugar
1t baking soda 2 ¾ c all purpose flour
11/2 c sugar 2 t cinnamon
Heat oven to 375. Mix shortening, butter, 1 1/2 c sugar, and eggs thoroughly. Sift together flour, cream of tartar, baking soda and salt; stir in. Roll mixture into walnut size balls. Then roll balls into 2 T sugar and cinnamon. Place 2 inches apart on ungreased baking sheet. Bake 8-10 minutes. These will puff up then flatten out.

1 (30 oz.) bag frozen hash-brown potatoes
2 (14 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/3 tsp. ground black pepper
1 (8oz) package cream cheese (softened)
minced green onion
1. In a slow cooker, combine potatoes, broth, soup, onion, and pepper.
2. Cover, and cook on low for 5 hours.
3. Stir in cream cheese, cook 30 minutes, stirring occasionally, until combined.
4. Garnish with green onion.
