2 T salsa ¼ c milk
2 c favorite shredded cheese
Favorite omelet fillings (sausage, bacon, mushrooms, green peppers, ham, etc)
Beat eggs, milk, salsa, 1c cheese, and your choice of fillings in a mixing bowl. Then pour into casserole dish, and top with the other cup of cheese. Bake @ 350 for 30 minutes. (Feeds 4, I have doubled it for more people).Voila, instant omelet with no standing by the stove and trying to get it to cook evenly and fold perfectly!! Mine usually ended up looking like scrambled eggs! We used this recipe many nights after ball games when we didn’t want a heavy meal so late. With this easy dish you can celebrate a win or try to dry tears from a loss. Either way you are not stuck at the stove!!! “And let us be concerned about one another in order to promote love and good works.” (Hebrews 10:24) So, let’s start sharing God’s love at home with our own families around the dinner table.
1 lb. smoked sausage sliced 1 small diced onion
2 cans Italian stewed tomatoes 1 chopped green pepper
1 c. frozen corn 3Tbs. Olive Oil
½ c water 1 t. Basil
8 oz. whole grain penne pasta 1 t. Oregano
2 c shredded Parmesan cheese
2-3 zucchini squash quartered lengthwise and sliced
2 T Cavender’s (or your favorite seasoning)
First, cook pasta according to directions and set aside. Next, sauté
green pepper and onion in olive oil. Then, stir in the other ingredients and bring to a boil; drain and add pasta to sausage dish and simmer for 15 minutes. Top with cheese and let melt. Dinner is served and delicious!!
In my devotion today I read Colossians 3:23; “Whatever you do, work at it as if working for the Lord.” I’ve read this many times and have actually taught this verse in Sunday school on numerous occasions. But today I really read it. “Whatever” for me means cooking, (as if for the Lord?), teaching, (no more grumbling about studying and computer work), laundry, (I’ll try, my laundry basket is possessed, it’s never empty!), being a wife and mom (difficult with a far away college kid; still having” issues” please pray!!). I think the Lord was telling me; we all have these “jobs” in our lives that we can’t change. What we can change is our attitude about those things. Have a joyful and grateful heart throughout all of our “chores”; be strengthened in faith and overflowing with thankfulness (also in Colossians). So today, I’m going to be thankful for my many clothes, clean out my closet and share the love!! Blessings, Lisa
