Two years ago, Drew and I had a conversation about maybe getting a dog. Football season had started and Drew felt bad about me coming home to an empty house every day. We had been married for three months at that time and thought a dog would be a great addition.
A simple twist on a classic after-school snack!
A few years ago, I was completing an internship for the University of South Carolina athletic program when I bumped into Mrs. Jerri Spurrier in the football tunnel before a game. As you know, Mrs. Jerri is the wife of Head Ball Coach, Steve Spurrier. We were shoulder-to-shoulder waiting for the team to return to the locker room after their pre-game warm-up when I noticed her. I introduced myself and told her I was an intern with the program and a lifelong Carolina fan. We struck up a conversation about the game that day and had a little small talk. I told her that I was engaged to marry a man that was going to be a high school football coach. Mrs. Jerri gave me a half smile, laughed and then said, “Being a coach’s wife is the best life anyone could ever have."
If you’re not ready to face the fact that it’s time to go back to school then you can just call them Blueberry Muffins.
These muffins would make for a great school breakfast! You can make a batch of them on Saturday or Sunday and enjoy them throughout the week.
The best part about this recipe is that it makes a TON of streusel!
