I’ve kind of been in a baking slump lately. Do you ever feel like that? Like you make the same thing over and over again? I wanted to try something new but still pretty easy. I came across this recipe by one of my favorite bloggers, Lizzy Early at Your Cup of Cake. She starts all of her recipes with a dry cake mix. She’s my kind of girl!
I feel like I should note that these are husband approved. Drew can be pretty picky about his desserts but he really loved these. I should also add that I sampled my fair share of them and I’ll be adding them to my list of favorite recipes.
Chocolate Buttermilk Cake:
· Devils Food cake mix (just the dry mix)
· 3 eggs
· 1/2 cup oil
· 3/4 cup buttermilk
· 1 cup sour cream
Cream Cheese Frosting:
· 8 oz cream cheese, softened
· ½ cup butter, softened
· 1 teaspoon vanilla extract*
· 3 cups powdered sugar*
· Oreos (for garnish)
1. Preheat oven to 350 degrees.
2. Mix eggs, oil, buttermilk and sour cream until combined.
3. Add to cake mix.
4. Fill cupcake liners 2/3 full.
5. Bake according to back of cake mix box, usually it will not take the full baking time.
6. Frosting: Combine cream cheese and butter and whip until light and smooth. Add vanilla and powdered sugar.
*You can add more vanilla and powdered sugar according to your preference in consistency and taste!
I added some sifted Oreo crumbs to my frosting but you don’t have to! If you do, make sure you crush them finely and then sift them into the frosting. If the chunks are too big they will clog the piping bag. I also added some bigger Oreo chunks to the top of the frosting.
These cupcakes do not have to be refrigerated in the first 24 hours.
Summer is here and the grills are heating up. Try this kale salad as a nice compliment to any of your grilled entrées. My niece Laura made this for us at one of our Catoe family gatherings. My sister’s–in-law and I loved it. We kept the guys away from it by just saying “kale salad” over and over, that pretty much worked for us!! They wouldn’t even try it (More for us). No worries though, this tasty salad will be a hit with everyone; guys included.
You will need:
1 pint strawberries
1-2 apples cored and diced
4oz crumbled goat cheese (or other soft cheese)
1/4 c chopped pecans, toasted (optional)
½ small red onion, thinly sliced
Balsamic vinaigrette (see below)
½c extra virgin olive oil
1/4c white Balsamic vinegar
1/2t sea salt
1/4t cracked black pepper
*whisk all ingredients together until combined
*Remember to wash and massage kale thoroughly; this keeps it from being so tough
Toss all ingredients and serve immediately. This is a great side dish for a summer time meal and it brings a pop of color to any table.
Here is a quick and easy dish that we loved and it took no time to throw together. Our kind of meal!
You will need:
1 rotisserie chicken
1&1/2 bags of frozen mixed vegetables
1 can cream of mushroom soup
1 can cream of chicken soup
1 soup can of water (add more if needed)
Biscuits (to be described later)
Take meat off of ALREADY cooked chicken (I love this part) and add to your pot along with soups and water. Heat through and then add frozen vegetables, bring to a boil and let simmer for about 20 minutes.
While mixture is simmering, pop your biscuits into the oven. Notice I didn’t say you had to actually make the biscuits. When biscuits are done and veggies are tender; place biscuit on your plate (opened up into two halves) and spoon chicken mixture over it. Enjoy!!
